Buttered Baby Potatoes with Parsley
These potatoes were a little dry and boring towards the end, so a little more butter, pepper, salt and parsley would've helped. Still, they make a good side dish to a fondue or steak.
Ingredients
500g baby potatoes
1/2 cup parsley leaves, chopped finely
1 tbsp butter, chopped
Directions
Boil a pot of water with a pinch of salt.
Add potatoes and boil for 12 minutes or until potatoes can be easily pierced with a fork. Drain.
Add parsley and butter, stir, and cover until the butter has completely melted.
Stir again and serve.
